Fried cod and garlic sauce

Recipe :
1 kilogram salted cod / dried fillet ( free from the bones ) , we dip it into water for a day, stored in the refrigerator, in a glass bowl, changing the water at least 4 times . After 1 day, remove its skin and any leftover bones.

batter :
1 small cup all -purpose flour
1 small can beer
1 egg
a little salt
1 pinch of pepper
( mix all the above with the wire you whisk the eggs )

garlic sauce with walnuts :
Put in a food processor the following :
1 cup of peeled walnuts
5-6 slices of bread, soaked in water and squeezed
2 Tbsp of vinegar
1 small cup extra virgin olive oil
3 chopped cloves of garlic
a little salt

In a preheated pan with extra virgin olive oil fry the pieces of cod from both the sides after you dip them into batter.When fried, just place them on a platter, on an absorbent paper towel, to keep them crispy .

Eggplants with minced meat in the oven

Recipe:
In a large frying pan put extra virgin olive oil until it covers the bottom of the pot. Once you get the proper temperature add one large minced onion -or 2- and 1-2 cloves of garlic and fry for 1-2 minutes having added 3-4 pinches of salt and pepper (if you have irritable bowel boil onions in water for at least 20 minutes before frying them). Then add 1kg minced meat. After the meat becomes light brown, stop stirring and pour two freshly cut tomatoes or tomato juice(package) and 2 bay leaves. After a boil add 1/2 glass of red wine and let it boil for another 5-10 minutes in order for the alcohol to evaporate. After your meal is ready, remove the bay leaves.
Cut the eggplants of medium size in half and remove the two peaks. Then  remove the seed if there are any inside. Deep your eggplants in salty water for half an hour for its bitterness to go away and then rinse with plenty of water to wash away the excess salt.

Fry your eggplants for a while to soften them and then before you place them in the oven, lay on them the minced meat and the chopped tomatoes. Afterwards on a baking pan, where you have spread baking sheet cook them in a preheated oven at 200 degrees Celsius for 1/2 hour. Add thinnly chopped potatoes on parchment paper, drizzled them with extra virgin olive oil, sea salt and freshly ground pepper.

Good Morning with french toasts with honey and cinamon

Recipe:
Whisk in a bowl an egg, preferably organic, and milk in the same amount as the egg. Dip inside 2 slices of bread and in a pan put 4 soup spoons extra virgin olive oil and when it is warm enough we fry the slices on both sides until golden brown over medium heat.
After removing from pan pour on each french toasts a teaspoon of honey and 1 pinch of cinnamon.

Βουβάλι Κερκίνης στη γάστρα

Συνταγή:
1.700 γραμ. Βουβαλίσιο χτένι σε χοντρές φέτες
1 συσκευασία ντοματάκια
2 κ σ πελτέ ντομάτας
1ντομάτα
2 κ σ ξύδι κόκκινο
Αλάτι
Πιπέρι
Μπαχάρι 1 κ γλ
1 ξυλάκι κανέλας-μετά το μαγείρεμα το πετάμε, δεν τρώγεται, προσοχή!
1φλυτζανάκι ελαιόλαδο
3 κρεμμύδια χοντροκομμένα
2 ολόκληρες σκελίδες σκόρδο, καθαρίζουμε μόνο τις φλούδες του
Βάζουμε όλα τα υλικά στη γάστρα και τα ανακατεύουμε και αφήνουμε το κρέας να μαρινάρεται σκεπασμένο στο ψυγείο όλο το βράδυ.
Το πρωί ψήνουμε σε κλειστή γάστρα για τρεις ώρες και μισή ώρα ακόμα με ανοιχτό καπάκι στους 200 βαθμούς κελσίου η μέχρι να μαλακώσει το κρέας. Κάθε τόσο γυρνάμε τα κομμάτια να παίρνουν ομοιόμορφα υγρασία από τη σάλτσα. Αν χρειαστεί προσθέτω 1 ποτηράκι νερό κατά το ψήσιμο.

Κρέμα ζαχαροπλαστικής(γέμιση):

4 κρόκοι αυγών βιολογικών και ένα ασπράδι αυγού
1/2 κούπα ζάχαρη
1/4 της κούπας cornstarch(στην Ελλάδα το βρίσκουμε με την ονομασία κορν φλάουρ)
(ανακατευω τα 3 πρωτα υλικά μαζί μέχρι να γίνει πηχτή κρέμα ανοιχτόχρωμη)
1,5 κούπες γάλα
4 βανίλιες (σκόνη) δηλ περίπου 1 κ γλ. βανίλια σκόνη
(τα επόμενα 2 τα ζεσταίνω στο 4 όχι παραπάνω για να μην κολλήσει το γάλα στο κατσαρολάκι και το μισό γάλα το ρίχνω σιγα σιγα στην ετοιμη κρεμα ανακατευοντας συνεχως και μετα το μειγμα ανακατευοντας συνεχως στο γαλα που περισσεψε στο κατσαρολακι που συνεχιζει να ειναι πανω στο ματι στο 4, μέχρι να πήξει,να είστε από πάνω μην καεί!
2 κ.σ. βούτυρο αγελάδος μόλις την αποσύρω από τη φωτιά και ανακατευω να ενσωματωθεί

χρήση φύλλων Βηρυτού- 1 πακέτο ξεπαγωμένα

200 γραμ. βούτυρο αγελάδος για το βουτύρωμα του πυρέξ και των φύλλων, 6 φύλλα κάτω και έξι φύλλα πάνω από τη γέμιση,την προσθέτω ζεστή μόλις γίνει.
Πριν το φουρνίσω το κόβω κομμάτια αλλά όχι μέχρι κάτω, βουτυρώνω και το πάνω φύλλο (όπως επίσης και μέσα στις σχισμές) και πιτσιλάω το γλυκό μου με λίγο νερό. Ψήνω σε προθερμασμένο φούρνο για 40 λεπτά στους 180 βαθμούς Κελσίου σε αντιστάσεις πάνω κάτω ή μέχρι να ροδοψηθεί. Το σιρόπι το βράζω 20 λεπτά περίπου σε μέτρια φωτιά. (225 γραμ. γλυκόζη, 250 ml νερό, 250 γραμ. ζάχαρη άσπρη κρυσταλλική, χυμός από 1/2 λεμόνι,στα τελευταία 10 λεπτά του βρασμού το ρίχνω σουρωμένο και το ξαφρίζω κατά τη διάρκεια του βρασμού αν χρειαστεί-βλέπε συνταγή μαρμελάδας), κατόπιν το ρίχνω πάνω στο γλυκό μου, ενώ το γλυκό έχει ήδη κρυώσει και το σιρόπι είναι ζεστό. Το γαλακτομπούρεκο το αφήνετε 1 ώρα να αποροφήσει το σιρόπι του και να κρυώσει σε θερμοκρασία δωματίου και το συντηρείτε στο ψυγείο λόγω κρέμας.

Αpricot jam

Recipe :

3kg apricot , ripe , with thin skin

3 kg of sugar

Cut the apricots in half and remove the kernels. Put the apricots and the sugar in a pot in layers, firstly the apricots, then sugar etc.. , the last layer is sugar and cover the pot with a lid and about 3 times in one day empty the syrup it comes out, in another pot carefully. Sugar dehydrates apricots .

In the evening we leave the pot with apricots covered and the other pot with the syrup also covered .

The morning bring the syrup to a boil to thicken and every so often remove the ”foam” and every now and then drip into a saucer of coffee some syrup to see how clotted it dropps , long before it comes out a thick candy syrup stop cooking .

If you can not understand when the ​​syrup is ready, then store the saucer coffee with 1 tablespoon of syrup in the refridgerator for 1/2 minute and then check if knots form when dripping.

Once the apricot syrup is ready then put the apricots into the syrup and let them boil removing the ”foam” again(see picture).

Then , pour the juice of 2 glasses with lemon juice , then continue skimming the ”foam” until syrup is ready .

Disinfect the glass jars and put the jam in but not being too hot so as not to break the vase . Let the jar with a half finger gap , cover the jar with a lid , preferably not plastic lid and turn the jar upside down until cool . Thus closed tight .

Then turn upright after they cool and store in refrigerator . For 1 year you can preserve it.

Fasoulontavas- Beans in the oven

Ingredients:
1 package beans
2 bay leaves
2-3 pinches of salt
2 pinches of red pepper
2 pinches of allspice
2-3 onions chopped into thin slices
2-3 tomatoes chopped and 2 sliced ​​thin
1-2 pinches of sugar
olive oil 1/2 cup at least

Recipe:
Let the beans soak water covered in a bowl with water for 10 hours (throw away the left water) or alternatively cooke them for at least 2 hours (and drain them) and then put them in the oven in a baking pan with all the ingredients and water for the beans to swell and soften (2 glasses) and if necessary add more during cooking . 1-2 hours in a preheated oven (not with fan/air) at 200 degrees Celsius , in the middle rack, or until the beans have softened.

Meatball soup

Recipe :

1.5 chopped dry onions
salt as desired
pepper as desired
1/2 tea cup of rice
parsley 2 Tbsp
extra virgin olive oil to the mixture if minced meat is not greasy enough
ground beef 500 g
Pour 7 cups water in a pot with salt and pepper and extra virgin olive oil and when it starts to boil put the ”round meatballs” in , optionally coat them with some flour and shake well the leftovers.
Boil the soup for about 20 minutes until the rice is ready and mix the eggs and lemons well with your hand or in the mixer , 2 eggs and 2 squeezed lemons . First , beat the egg whites separately until they become white and frothy with a whisk and then add the egg yolks and lemon juice and mix well and then add the broth, around 10 Tablespoons stirring continuously, in the egg and lemon mix and then add the egg- lemon mix in the pot and stir well to incorporate .

Fried meatballs with cumin

1/2 kilogram ground beef
2-3 pinches of salt
2 pinches of pepper
2-3 pinches of cumin
2-3 pinches of oregano
1.5 chopped dry onion
2 slices of bread soaked in water and then squeezed and cut into small pieces
2 Tbsp extra virgin olive oil
1 Tbsp vinegar
1 egg
Knead well the ingraddients and form the meatballs , coat them with all purpose flour , remove excess flour and fry in extra virgin olive oil enough to reache the middle of the meatball . Once they get the color of the picture place them on a big plate with absorbent paper towels to drain excess oil to preserve the meatballs crispy .

Kiss loren with extra virgin olive oil and avocado

Ingredients for the dough:
1.5 glass of water all purpose flour
2 glasses self rising flour
1 glass of milk 3.5%
1 big egg
2 Tablespoon extra virgin olive oil
2 pinches of sea salt
I knead my ingredients and let the dough rest covered 1 hour in room temperature and 1/2 hour in the fridge. Just after I remove it from the fridge I ”open” it with my hands in a large buttered Pyrex. On top I put feta cheese, Gouda, smocked cheese, turkey in slices, 1/2 avocado in small cubes, fresly grounded pepper and lastly 2 Tablespoons of cooking cream on top.
I bake regularly(not with fan) my kiss loren for 3 quarters in a preheated oven in 200 degrees Celsius.

Trahanas(Tarhana)

Recipe for cold days:
3 glasses of water
1 cup trahana
extra virgin olive oil for the cooking
feta cheese
(optionally add a pinch of pepper)
In low temperature i boil the first 3 ingredients and stir them frequently , in 10 min. trahanas is ready, add water if necessary.(if it begins to stick on the pot even if I stir)
In my plate, I add some feta cheese while trahanas is still hot.

Chicken with rice, thyme, lemon zest

Recipe :
The roasted chicken leftovers from our last day we can easily and quickly use them on the following day. We only use the white flesh of the chicken ( half chicken) and throw the rest away. Each piece in the same size . In a pot put extra virgin olive oil just to cover the bottom , and 1 chopped onion . Saute slightly and pour 500 gr rice and mix them . Add salt and pepper , not much, because I do not forget that the chicken was already seasoned . Throw the chicken pieces and stir once again. Add water to the ratio of 1 rice – 1.5 water , ie every 1 cup rice use 1.5 cup water . This ratio is ideal for kettle , however, if you use a pot with a lid , add a little more water after the first quarter of the boil. Cook for another 3 minutes and leave the rice on a cold surface still covered with the pot lid to suck the remaining water. Once the rice is ready and softened enough uncover the pot and serve. Leave open the pot to cool completely before storing it in the fridge . Yoy can preserve the rice in the fridge for 1 or 2 days .
Add to each portion 1 pinch of organic lemon zest and 1 pinch of thyme and accompany the rice with yoghurt or feta cheese .

Fried meatballs

recipe :
1 kilogram of ground beef
1-2 onions chopped
1-2 tbsp extra virgin olive oil
1-2 pinches of salt
1-2 pinches of pepper
1-2 pinches of oregano
2 Tbsp vinegar
1-2 slices of bread soaked in water and squeezed
1 egg
2-3 tbsp parsley
all purpose flour for coating the meatballs
extra virgin olive oil for the frying . We put so much oil that reaches the middle of the meatballs during frying .
We blend all the ingredients, then form the meatballs with our palms and then coat the meatballs with the flour. Remove the excess flour and place the meatballs in the preheated oil(in a pan) at medium temperature for the olive oil not to be burned quickly and blacken the bottom of the pan with burnt flour. If we have many meatballs to fry, we use a new pan with fresh new olive oil.
Once the meatballs browned on each side we remove them from the pan and place on an absorbent paper .

Tagliatelles with thyme, extra virgin olive oil and goat cheese

A fast meal for occasions you don’t have much time to cook. Tagliatelles belong to the pasta which need a short time to boil, about 5 minutes. After boiling them i don’t wash the tagliatelles, I only drain them and put some extra virgin olive oil, goat cheese, a pinch of fresly grounded pepper and a pinch of thyme on each portion. Thyme is very beneficial for us. It is acting as a stimulator, helps healing bronchitis and is a general appetizer.

Roasted chicken with potatoes in the oven

recipe:
1.5 kilogram chicken
5-6 potatoes
extra virgin olive oil
4-5 pinches of salt
1-2 pinches of pepper
2 teaspoon. oregano
1 teaspoon. mustard powder
1 teaspoon. honey
1 Tbsp vinegar
put also 1/2 cup of water into the pan
optional: squeeze also 1 lemon instead of using vinegar
One hour and a quarter baking in preheated oven at 190 degrees Celsius or depending on the strength of your oven.
bake for 40 minutes until turning the chicken from the other side in order to become brown and cook evenly. (Make a deep cut on each leg of the chicken in order to be cooked inside)
