Roasted chicken with potatoes in the oven

recipe:
1.5 kilogram chicken
5-6 potatoes
extra virgin olive oil
4-5 pinches of salt
1-2 pinches of pepper
2 teaspoon. oregano
1 teaspoon. mustard powder
1 teaspoon. honey
1 Tbsp vinegar
put also 1/2 cup of water into the pan
optional: squeeze also 1 lemon instead of using vinegar
One hour and a quarter baking in preheated oven at 190 degrees Celsius or depending on the strength of your oven.
bake for 40 minutes until turning the chicken from the other side in order to become brown and cook evenly. (Make a deep cut on each leg of the chicken in order to be cooked inside)

Tenderloin with cheese cream and white wine

I cut the tenderloin into pieces (see foto), and roast it in a pan with a little extra virgin olive oil for about 2 minutes on each side (or depending on the thickness of each portion) and then pour in the pan 1 small glass of white wine. Boil the meat for 10 minutes, for the alcohol to evaporate and add 2-3 pinches of salt, 1-2 pinches of pepper, 1-2 Tbsp of cream cheese and mix them to melt and become a gravy.

Whole wheat bread & tenderloin and potatoes in the oven

Before baking:

For the buns , see bread recipe, only instead of all purpose flour 100%, put 50 % all purpose flour and for the remaining 50% use whole wheat flour
For the tenderloin :
Take 1 piece of whole tenderloin from your butcher , he will cut for you only the fats and then you cut the meat with a sharp knife in thin pieces , see photo. The marinate with herbs ( 1 teaspoon sage , 1/2 teaspoon thyme , 1/2 teaspoon rosemary , 1 chopped dry onion , 2 Tbsp extra virgin olive oil, 1-2 Tablespoon of mustard (not powder ), 1 pinch of sea salt , 1 pinch of pepper , optionally 1 clove of garlic .
In a sprayed pyrex with extra virgin olive oil cut 2-3 potatoes and above them put the marinated meat , bake at 200 degrees in a preheated oven(not fan), in the middle rack, for 20-30 minutes and Bon Appetite !

Άπαχα μοσχαρίσια μπιφτέκια στη σχάρα

Υλικά:
1/2 κιλό κιμάς άπαχος μοσχαρίσιος
1/2 κρεμμύδι ψιλοκομμένο και αν έχουμε πρόβλημα με το στομάχι και προβρασμένο για 20′ με λίγο νερό σε ένα κατσαρολάκι
1 πρέζα αλάτι
1 πρέζα πιπέρι
2 κ. σ. κέτσαπ
2 κ. σ. μουστάρδα
1 κ. γλ. κύμινο
1 σκελίδα σκόρδο ψιλοκομμένη
2 πρέζες ρίγανη ξερή
2 φέτες ψωμί μουσκεμένο και στραγγισμένο
3 κ. σ. εξαιρετικά παρθένου ελαιόλαδου
προαιρετικά 1 αυγό
Ζυμώνω καλά να ανακατευτούν τα υλικά και τοποθετώ για 2 ώρες στο ψυγείο πριν το σχηματισμό των μπιφτεκιών στο μέγεθος που επιθυμώ και ψήνω μέχρι να πάρουν χρώμα στην ψηστιέρα χωρίς προσθήκη παραπάνω ελαιόλαδου όσο είναι δυνατόν.
Προς το τέλος του ψησίματος προσθέτω μία φέτα κασέρι πάνω από το καθένα να λιώσει και τα αφαιρώ από τη σχάρα.
Τώρα που είναι καλοκαίρι συνοδεύω με μια δροσερή σαλάτα λαχανικών εποχής!

Low fat minced meat with vegetables

Recipe:
(you add the ingredients with the following order in the pan)
1 small onion chopped and boiled for 20 minutes in a preheated pan with 1/2 cup of extra virgin olive oil- you saute it
1/2 pound of sirloin beef cut into minced meat for those who are on a diet, but there are more economical options in beef, a butcher can inform you – you cook it until it becomes light broun
2 large green peppers cut into pieces
1 large ripe tomato cut into pieces
2 potatoes, boiled cut into pieces
1-2 cloves of garlic, 1 pinch thyme, 1 pinch rosemary, 1 pinch sea salt, 1 pinch freshly ground pepper, 2 drops of Tabasco or more if you can stand this.
when you serve it you add in your plate toasted bread in olive oil(in a pan or in the oven)

Pasta with minced meat

In a large pan pour extra virgin olive oil until it covers the bottom of the pan . Once you get the proper temperature add a large thinly sliced onion or 2 – and 1-2 cloves of garlic , whole, not chopped , just to give flavor to the food . Saute for 1-2 minutes, having already added 3-4 pinches of sea salt and fresly ground pepper ( if you have stomach problems boil the onion in water for at least 20 minutes before frying it in the oil) . Then add 1/2 pound or 1 pound – minced meat, depending on the number of people who will eat. After the minced meat becomes light brown, stop stirring and add two freshly cut tomatoes or a package of tomato juice and 1 or 2 bay leaves , depending on their size. After the chopped tomato boils for 10 min.- if you want-pour in the pan half glass of red wine and leave it boiling for 5-10 minutes before eating for the alcohol to be evaporated. When the minced meat is ready, we remove the bay leaves.

Whole grain spaghetti pasta with tzoumagias sausage

Recipe:
Whole grain spaghetti have usually only 5 min. boiling time and then you drain them without pouring water on them. You pour some extra virgin olive oil in the pot and mix the pasta in it.
You fry he sausages (tzoumagias, a greek sausage, or any other kind you want) in a pan with extra virgin olive oil and you add some of the remaining fat from the frying on your portion- see photo. Add some cheese on them, for example kefalotiri ( greek cheese).

Optionally:
Rosemary (1/2 pinch for each portion)
Lemon zest from un-waxed lemons (a little on my portion)

Schnitzel in the oven (on parchment paper)

 

recipe – ingredients :
Breadcrumbs , 2 eggs , 1 pinch of salt, 1 pinch or fresly ground pepper , 2 pinches of curry, 2-3 Tablespoons of extra virgin olive oil, 5 pork loin chops .

Dip the pork into the egg mixture ( 2 eggs , salt , pepper , curry , oil ) and then put the schnitzels in the breadcrumbs and coating both sides well and place them on parchment paper and bake them in preheated oven in 190 grad celsius for about 15′ on each side.(total cooking time: 1/2 hour)
