Grease a baking pan with extra virgin olive oil, take the prebaked perek leaves, water them a bit and spread some oil on them and lay them in layers,after 2 layers on the pan, add the staffing (ingredients: 1 egg, feta cheese, smoked cheese, 2 spoons of Greek yoghurt, half cup of milk, some pepper.)
Lay one more perek “leave” on top after you moist it like the previous ones and bake your pie in a preheated oven in 190 grad Celsius for 30-40 min.

Pizza with low calories
Recipe:
Dough:
All purpose flour, depending of how many individual pizzas I like to do.
Dry yeast, 1 sachet for a pound of flour.
Whole fat milk, so much as necessary, until the dough does not stick in our hands.
Extra virgin olive oil, 2 tbsp for half a kg of flour.
Coating:
Ketchup, not too much and a pinch of oregano and a pinch of salt, if we can not eat our pizza unsalted. Boiled turkey cut into large pieces, smoked cheese cut into large pieces, onion into thin strips, colored peppers in small pieces, tomato into thin slices, olives without their core and anything else we like, preferably low in calories if you want to eat your pizza for dinner. Ingredients, such as cheese, which have more fat come on top, to cover the rest of the ingredients to prevent them from drying out.
Execution:
Let the pizza dough to rise, covered, for at least 1 hour before cooking, and if you do not want to add more oil, don’t bake it in a baking pan greased with oil. Bake it on parchment paper folded in half, directly on the oven shelf .
To make the dough even fluffier, let the dough rest in the refrigerator overnight.
Bake your individual pizza at 200 degrees Celsius-using a piece of your ready dough, resistors up and down, in preheated oven for 15 to 20 minutes, depending on the strength of our oven.
If you want to make a large pizza, use a larger portion of your dough, bake the pizza in a preheated oven at the same temperature for half an hour to three quarters, depending on the strength of our oven.

Pancakes with honey-cinnamon or honey-cream cheese fried in extra virgin olive oil
mixture ( for 4 people , makes 16 to 18 pancakes ) :
1 organic egg , 2 tbsp extra virgin olive oil , 2 tbsp Katiki Domokou(greek cheese in creamy texture, not too saulty), 4 tbsp milk , 2 tbsp sheep’s greek yogurt , 4 tablespoons all purpose flour.
Mix the ingredients with the special whisk for beating eggs and with the help of a soup spoon pour the mixture in the pan with the preheated extra virgin olive oil, one soup spoon to form each pancake .
Once fried on each side and ready (light browned- see photo-) place them on paper towels and sprinkle with cinnamon and honey or honey – Katiki Domokou cream cheese or any cream cheese you have at home .

greek sheep’s yoghurt with oats and orange preserves
Good Morning with french toasts with honey and cinamon
Recipe:
Whisk in a bowl an egg, preferably organic, and milk in the same amount as the egg. Dip inside 2 slices of bread and in a pan put 4 soup spoons extra virgin olive oil and when it is warm enough we fry the slices on both sides until golden brown over medium heat.
After removing from pan pour on each french toasts a teaspoon of honey and 1 pinch of cinnamon.

Kourou cheese pie
recipe :
( for the dough )
500 gram. all purpose flour
1 greek yoghurt (not low fat)
1 cup extra virgin olive oil (same quantity as yoghurt)
3 teaspoons of baking powder
1 pinch of salt, knead the ingredients for the dough
( for the filling )
250 gram. feta cheese
200 gram. any unsalted white cheese you prefer
1 pinch of pepper
1 egg, mix the ingredients for the filling well
I use a special cutter for the Kourou dough, otherwise you can cut the dough with the help of a glass using it as a cutter and also use a fork to seal the edges. Don’t add much stuffing because during baking it may come out of the dough .
Bake in a baking pan, you have sprayed with extra virgin olive oil, in a preheated oven, in the middle rack, at 200 degrees Celsius,(not fan/air) for 20 minutes or so , depending on the strength of our oven and the size you made your pies or until browned .

Vanilla cake with chocolate chips
Ingredients (all of them in room temperature):
3 cups self rising flour
2 cups of sugar
4 eggs
200-250 gram cow butter
1/2 cup of fresh milk
1/2 cup of yoghurt
1 tsp natural vanilla
1 large bar of chocolate cut in large pieces
Recipe:
1)Beat the butter,with the (Κ) in your mixer, min. 5 min. in high speed , then add the sugar gradually to incorporate.
3)We add the eggs in the mixer one by one and keep beating.
4)We turn the mixer in medium speed and add the milk and yoghurt, then we lower the mixer to the lowest speed and add the flour and beat until incorporated.
5)We add the vanilla and keep beating for another minute.
6)We cut the chocolate in large pieces and after I butter the cake pun and also dust it with some flour and pour the dough in the cake pan, and sink the chocolate pieces in.
In a preheated oven in 180 grad Celsious we bake our cake for about 60 min. or until we dip a knife in the cake and comes out almost dry, we make this test in the last 10 min. of the baking time. Be careful, don;t open the oven door before the first 40 min of baking time. After baking I leave my baking pan on a wooden counter to cool down and after 15 min we turn it upside down with a help of a plate on a rack to cool down evenly. Finally, I cover it and preserve it in room temperature for at least 4 days.
