Bread with oregano, sesame, extra virgin olive oil and sea salt
recipe :
1 kg all purpose flour
16 grams of dry yeast
2 pinches of sugar
4 pinches of salt
260 ml water
3-4 tbsp extra virgin olive oil
Knead the ingredients to form a dough and put the dough in a large stainless steel or in a large glass bowl and cover with a large plate . (The dough will maximize its size at least 4 times) Every 2 hours, knead the dough to remove the air and leave it again to relax . After about 6 hours, I let the dough rest , covered at room temperature on the kitchen counter , I heat the oven to 200 degrees Celsius in the program for bread . I separate the dough into four pieces and form 4 breads-see photo- , each one needs half an hour baking time on the lower rack. Before baking Ι coat the breads with a little extra virgin olive oil and sprinkle with sesame seeds , oregano , sea salt -see last photo- .Then bake 2 breads together onto parchment paper in the preheated oven on the last rack of the oven .

Buns with pizza dough
Recipe:
2 large glasses of all purpose flour, dry yest 8 gram., 2-3 Tablespoons extra virgin olive oil, 3/4 glass of milk, 1 pinch of sugar, 1 pinch of salt. We leave the dough covered in room temperature for at least 1 hour and if it still sticks on our hands add some more flour and we knead again for the dough to absorb it.
We form them with our hands and twist them before palcing them on parchment paper and bake them in a preheated oven on a baking pan, the regular way(not air/fan), in the middle rack of our oven, in 200 grad Celsius for 10 min.

”flat” bread
Recipe:
all purpose flour
add water so much so as to not to stick on your hands while kneading
1 pinch of salt
optionally add some extra virgin olive oil(not more than 2 Tablespoons)
Bake in a preheated oven the regular way(not fan) in 200 grad Celcius in the middle rack on a baking pan with parchment paper on it for 10 minutes or more depending the size of each portion or depending your oven.

Whole wheat bread & tenderloin and potatoes in the oven
Before baking:
For the buns , see bread recipe, only instead of all purpose flour 100%, put 50 % all purpose flour and for the remaining 50% use whole wheat flour
For the tenderloin :
Take 1 piece of whole tenderloin from your butcher , he will cut for you only the fats and then you cut the meat with a sharp knife in thin pieces , see photo. The marinate with herbs ( 1 teaspoon sage , 1/2 teaspoon thyme , 1/2 teaspoon rosemary , 1 chopped dry onion , 2 Tbsp extra virgin olive oil, 1-2 Tablespoon of mustard (not powder ), 1 pinch of sea salt , 1 pinch of pepper , optionally 1 clove of garlic .
In a sprayed pyrex with extra virgin olive oil cut 2-3 potatoes and above them put the marinated meat , bake at 200 degrees in a preheated oven(not fan), in the middle rack, for 20-30 minutes and Bon Appetite !
Buns with garlic
Fluffy and delicious, flavoured with garlic, 1 clove garlic, chopped, for 5 rolls. The recipe came out alone , because I was hungry and wanted to eat something at the time and to combine it with tomato and oregano . So, the recipe is approximately three handfuls of all purpose flour, 1 handful whole grain flour with 2-3 tsp. extra virgin olive oil , 1 pinch of salt, 1 pinch of sugar, 8 grams of dry yeast , enough water so that the dough, during kneading, does not stick to our hands and optionally, I add 1 clove of garlic finely chopped and divided to 5 rolls . Let the dough rise for half an hour,and preheat the oven during that time, at 200 degrees Celsius in the program for baking breads. Use a sharp knife or a pizza cutter to slash the top of the bun, before I put them on the parchment paper, I laid on my baking pan.
Bake them for about 20 minutes in the middle rack of our preheated oven .
