Gilthead Seabream in the oven

We buy 2 Gilthead Seabreams, 500grams each. The fisherman prepares and cleanses the fishes for us. At home, we clean in with water in the sink thoroughly and into the slits, the fisherman opened.
Preheat the oven to 190 degrees Celsius and place the fishes on a greased baking pan,also oil the top of the bream with extra virgin olive oil and salt it with coarse sea salt and add also a little red pepper. In 50 minutes to 1 hour are the breams (half a kilo each) ready and we serve them with lemon, extra virgin olive oil and parsley (optional).

Ingredients:
500 grams hard flour
8 g dry yeast
1 teaspoon mahlep(mahaleb)
1 teaspoon ground kardamom(kardamon)
250 ml milk
30 grams sheep butter
30 grams cow butter
120 grams sugar
zest of one organic lemon (not waxed)
2 eggs and 1 more for spreading
Running:
Put the flour, yeast, sugar, mahlep, kardamom, lemon zest, eggs in the blender . Then, after I melted butter, mix together with the milk and after the mixture cools(to avoid yeast burning)add it in the mixer as well. I use the hook accessory for mixing. As soon as the dough wrapps around the hook or when it peels off all the walls of the basin, it means that my dough is ready. Let it rise in the basin of my mixer covered for 2 hours (almost triples) and after kneading again with my hand to remove the air in it, give to the dough the form of a the ball and place it in the middle of a large greased round pan or Pyrex. Let the dough for another hour to rise and cover it afterwards with the help of a brush with a raw egg before I put it in the preheated oven. Bake the cake for 50 minutes to 1 hour. Once you remove it from the oven sprinkle it with icing sugar, candy or covered it with glaze after cooling or Sugarpaste (see recipe on my site)

Cannelloni stuffed with minced meat and cannelloni stuffed with cheese

The recipe is for 300 grams minced meat and 12 cannelloni:
Roast the ground beef in extra virgin olive oil and then add 1 chopped onion. I continue to mix until the minced meat becomes light brown and add 2 chopped tomatoes without the peel, salt and pepper. I can also add 1-2 pinches cinnamon powder. Once the minced meat is ready add cheese that melts easily and stir.
The bechamel sauce is made with 2 cups whole milk and 3 table spoons of Cornstarch. In a glass of tea mix a little cold milk with the cornstarch and warm the remaining milk at low heat in a saucepan, stirring frequently to avoid burning it. As soon as milk starts boiling pour in the mixture of the cold milk and cornstarch, and keep stirring until the mixture starts to thicken . Once thickened pour in 2 table spoons of cow butter and some salt.
Grease the pyrex or baking pan with extra virgin olive oil and pour some bechamel sauce to cover the bottom of the pyrex. I place the stuffed cannelloni(do not boil them) with minced meat-cheese mixture kim without touching each other to avoid sticking during cooking. Cover them with the rest of the bechamel sauce and tomato juice to avoid drying out during cooking and add some Parmesan on top. Bake at 185 degrees Celsius in preheated oven for 20-30 minutes.
(For the filling with cheese and ham, mix in it a little sauce to homogenize them, the remaining steps are the same.)

Roasted chicken

Ingredients for coating the chicken:
1 soup spoon mustard, 1 teaspoon honey, salt, 1-2 pinches of red pepper, paprika 1-2 pinches, extra virgin olive oil 2 soup spoons, 1-2 pinches of oregano, lemon juice.
for the potatoes:
1-2 pinches of oregano, lemon juice, extra virgin olive oil 3-4 soup spoons, mustard 2 soup spoons, salt, red pepper.
I add a little water in the pan and bake the chicken along with the peeled potatoes in preheated oven at 190 degrees Celsius for 1.5 to 2 hours, depending on the strength of my oven or the size of the chicken, resistors upside down.

Sweets with cake, bitter chocolate, peanut butter, candy melts, candy sprinkles

The recipe is the same with pop cakes, which I have already posted. Instead of butter use peanut butter. For the coating, warm in a heatproof bawl candy melts for 2-3 min. in 200 Grad Celsius in your over and stir them with a spoon. Roll the sweet balls in and you are ready. Use any color of candy melts you want. If you don’t have candy melt, melt some chocolate in the same way after you chop it into pieces. Before the coating cools sprinkle some candy on top.

Pizza with low calories

Recipe:
Dough:
All purpose flour, depending of how many individual pizzas I like to do.
Dry yeast, 1 sachet for a pound of flour.
Whole fat milk, so much as necessary, until the dough does not stick in our hands.
Extra virgin olive oil, 2 tbsp for half a kg of flour.
Coating:
Ketchup, not too much and a pinch of oregano and a pinch of salt, if we can not eat our pizza unsalted. Boiled turkey cut into large pieces, smoked cheese cut into large pieces, onion into thin strips, colored peppers in small pieces, tomato into thin slices, olives without their core and anything else we like, preferably low in calories if you want to eat your pizza for dinner. Ingredients, such as cheese, which have more fat come on top, to cover the rest of the ingredients to prevent them from drying out.
Execution:
Let the pizza dough to rise, covered, for at least 1 hour before cooking, and if you do not want to add more oil, don’t bake it in a baking pan greased with oil. Bake it on parchment paper folded in half, directly on the oven shelf .
To make the dough even fluffier, let the dough rest in the refrigerator overnight.
Bake your individual pizza at 200 degrees Celsius-using a piece of your ready dough, resistors up and down, in preheated oven for 15 to 20 minutes, depending on the strength of our oven.
If you want to make a large pizza, use a larger portion of your dough, bake the pizza in a preheated oven at the same temperature for half an hour to three quarters, depending on the strength of our oven.

Chicken in the oven with spices and flat bread

I add 2 breasts of chicken or 4 chicken thigh fillets to a mixture of 1 yoghurt, a little lime juice, ginger, garlic, cumin, salt, red pepper, coriander, paprika mix and then bake for half an hour at 185 degrees in an greased pan with extra virgin olive oil in a preheated oven.
I bake the pies for 20 minutes in a preheated oven at 200 degrees Celsius, on a baking sheet. Ingredients: Flour, a little salt, water and a little extra virgin olive oil. Put so much water so that the dough doesn’t stick on our hands while kneading. Then the dough rests for half an hour covered and I roll the pies with a rolling pin on a baking sheet and bake them.
I chop colorful peppers and a large tomato and make a sauce with yoghurt, ketchup, a little soja sauce,a little tabasco and a little extra virgin olive oil.

pop cakes, bride and groom

We make a simple cake , which we crumble after it is baked and cooled and add in it melted chocolate and butter in equal proportions, until the dough can be formed into small balls ( see photo) . We put the balls in the fridge for about 2 hours and then dip a stick in melted chocolate and make a hole just below our chocolate ball which we reposition in the fridge with head down and stick up.
We roll a small piece of our homemade sugarpaste with the help of a small rolling pin and icing sugar to prevent sticking on your rolling surface and cover with it our chocolate ball.
For the brides, deap the half pop cake into water and then sprinkle on it dry sprinkles of coconut. Then with the help of a paste of icing sugar and water we attach to the “neck” of the bride(see photo) small sugarballs to form a necklace.
For the groom, after the sugarpaste has dried, we deap the two oposite sides of the pop cakes into melted chocolate or melted candy melts to form the suit and then with the help of a small pintbrush and the melted chocolate we paint the button and the bow tie.
Once the chocolate has cooled and the stick has been in the pop cake we stick them in a base of Styrofoam.
We preserve them in the fridge.

Potato fries with dip

Peal the potatoes and cut them in slices. Fry them in a preheated frying pan with extra virgin olive oil an let them drain on paper towels.
Ingredients for the dip:
1 small, purple, onion cut into rings
1 pepper “Florinis” (red sweet pepper)
1 green pepper
small tomatoes
chopped feta cheese
dried oregano
Extra virgin olive oil
Implementation:
After frying the vegetables- in extra virgin olive oil; Put them in a food processor along with oregano, feta cheese, extra virgin olive oil, until they result in a smooth texture..and the dip is ready!

Mexican minced meat

Recipe:
Saute a pound of minced meat in extra virgin olive oil and after cooked – 10 min. – add in the pan 1 chopped onion, 3-4 green peppers , 1 package large tomato puree , 1 can red kidney beans , 2 pinches of pepper , 2 pinches of chili , 2 pinches pepper , 5-6 pinches of sea salt, 2 pinches of cumin , 2 pinches of coriander , optional, 10 minutes before end of cooking add half a glass of red wine and let the alcohol evaporate.
Serve with rice or on a slice of bread salve spicy mustard and then the minced meat.

Pancakes with honey-cinnamon or honey-cream cheese fried in extra virgin olive oil

mixture ( for 4 people , makes 16 to 18 pancakes ) :
1 organic egg , 2 tbsp extra virgin olive oil , 2 tbsp Katiki Domokou(greek cheese in creamy texture, not too saulty), 4 tbsp milk , 2 tbsp sheep’s greek yogurt , 4 tablespoons all purpose flour.
Mix the ingredients with the special whisk for beating eggs and with the help of a soup spoon pour the mixture in the pan with the preheated extra virgin olive oil, one soup spoon to form each pancake .
Once fried on each side and ready (light browned- see photo-) place them on paper towels and sprinkle with cinnamon and honey or honey – Katiki Domokou cream cheese or any cream cheese you have at home .

Tart with swiss meringue and plum preserves

Base:
Use the buttercookie’s dough recipe OR:

250 gr all purpose flour
40 gr. sugar
40 gr. butter of cow milk
1 egg
1 pinch of salt
8 gr. of dry yeast
100 gr. of milk
enough material for 4 small pyrexes
Grease the pyrexes with cow butter milk and spread the dough with your hands
At 185 degrees Celsius (not in fan/air) bake for 25 minutes or so , depending on the strength of your oven and check with the knife or toothpick if it is dry inside, then stop baking .
Let the dough cool in the pyrex. On top, put either pastry cream , or the mixture I made with honey and katiki Domokou(it’s a spreading cheese, lightly salted) . Over the cream, I put my swiss meringue and cinnamon, syrup of plum preserves or any sweet you wish .
Meringue ingredients:
Egg whites (4 ) , granulated sugar ( 250 g ) or powdered ( 250 g ) , depending on whether you put in a bain marie the egg whites with the sugar(granulated sugar) for 4 minutes and stir constantly with a whisk, or not(powered sugar) . Natural vanilla extract, 1 teaspoon or 1 teaspoon vanilla powder . 1 teaspoon squeezed lemon juice. Mix sugar , egg whites and lemon juice in a stainless steel or heatproof bowl of stainless steel Basin and place this stainless steel basin over a saucepan with a little boiling water (in a double boiler) for 4 minutes with the wire , stir continuously and fast, until to see with your hand that the sugar has melted . Then, put the processed egg whites in your stainless steel mixer bowl and start beating them slow with the whisk attachment and then quickly for at least 10 minutes until the meringue is ready and has stiff ends .

If you do not use it directly , I cover the bowl with a cling film and place in the refrigerator . Withstand for 5 days at least .

Recipe :
Boil the pasta following the instructions on the packaging , choose best wholewheat pasta . Then we drain the pasta in a stainless steel colander . In the pot pour some extra virgin olive oil and add in the baby spinach, which is suitable for salads , after we wash it thoroughly , sea salt , and pepper. We stir in the baby spinach for a few seconds only , because it is very tender and add the boiled pasta and stir. Withdraw the pan and serve with feta cheese .

In the pot pour some extra virgin olive oil , small tomatoes or chopped tomatoes , sea salt , pepper and a pinch of sugar if the tomatoes are not sweet enough . Once the sauce is thickened, add in the baby spinach, which is suitable for salads , after we wash it thoroughly . We mix the baby spinach in the sauce for a few seconds only , because it is very tender and add the boiled pasta and stir. Withdraw the pan and serve with feta cheese .
