Fry your potato chips in extra virgin olive oil after you wash them, then drain them on a paper towel.
Beat your eggs(2 per omelet) thoroughly in a bowl by hand and add sea salt, a little pepper optional, and some fresh cow butter at room temperature. After you heat the extra virgin olive oil in a frying pan (put oil just enough to cover the pan) pour the beaten eggs in the pan and cover evenly the whole surface of the pan. Starting from the walls of the pan, remove the omelet from the pan with the help of a large spatula and fry the omelete from the other side as well.
